That is a very difficult question to answer, as sounds are almost completely subjective.  A study of the archives here would show that what one person considers a spot-on B3 sound, another would consider that same sound as anything but a B3 sound - particularly when it comes to Leslie emulation.  The best is to spend a few evenings at the keyboard, auditioning the sounds and deciding for yourself which ones sound like the best B3 sounds to you.  Leslie emulation, for those sounds that use it, is turned on and off with the MOD button, at the left end of the keybed, just above the Pitch Bend Wheel.  If a particular Leslie is not to your liking, you can create and save your own User DSP  file, include that in a particular tone and save that combination as a User Tone.  Not only can you control the overall Leslie rotation speed, but you can also control how fast it speeds up and slows down, but that will require study of the Tone and DSP creation and editing sections of the manual.
