Can anyone tell me after you record a piece in song sequencer how you can delete it?

2 questions: I was wondering if after I create a user rhythm and I'm using the sequencer to build a song... In this case Verse Chorus Bridge chorus format, can I change my user Rhythm on the Fly to reflect the changes of the parts of the song? Also can I record piano and audio from a microphone simultaneously? Thanks in advance.
